“The flavors, colors and beauty in our food translates so well through our servers and dining experience,” exclaims Rebecca Whiteley, Restaurant Supervisor of BACÁN.

This open theater-style kitchen is located in Lake Nona Wave Hotel, boasting a city aesthetic with modern light fixtures and furnishings. “Bàcan'“ translates to “cool” in Spanish, setting the theme for chill atmosphere that holds a Miami-like vibe with Hispanic elements in a fine dining ambiance. A mural of Pachamama, the Incan goddess of harvest, illustrates the richness of the restaurant’s theme.

🐚 Scallops

This dish offers scallops a la plancha for a smokey seafood flavor, topped with caviar to amplify the salty oceanic taste. The beetroot tartare adds vibrance to the aesthetics, holding a creamy texture to balance the flavors, while the yuca crisp provides a slight crunch.

🐙 Charred Pulpo

The smokey octopus in this dish holds a slightly chewy texture, brightened by the flavor of Argentinian chimichurri. The tang is complimented by the aji amarillo, balanced by the creaminess of smoked feta. The black olive dust emphasizes the umami of the dish.

🍅 Heirloom Tomato

The freshness of this dish is portrayed through the Florida heirloom tomatoes that hold a juicy bite, emphasized by the tang of pickled peach, and balanced by the herb flavor of green goddess. Smoked salt and feta goat cheese provide a depth of taste, while flaxseed crackers offer a crunch of texture.

🐟 Florida Fish

This dish provides a level of drama with a whole, roasted Florida market fish that holds a tender meat texture with seasoned skin offering moments of crisp. The seafood flavor is brightened with grapefruit mojo and charred lemon, while shaved fennel provides a slight depth of aroma.
